ウニの解禁日 / Open date of the sea-urchin

下北のウニの解禁日の様子。下北半島の海岸といってもなかなか広く、海岸の環境もかなりの違いがある。太平洋岸、津軽海峡側、陸奥湾側、砂浜、砂混じりの岩場、磯、断崖絶壁、波の荒い海、穏やかな海といった具合。これは太平洋岸の白糠(しらぬか)という集落の前海。砂浜と断崖の間の磯という環境。

ここの海は女性や子供でも(体力的な意味で)ウニを採ることが出来る海だ(漁業権がないと採集できないことは他の地域と同じ)。過去には膝までの裾まくりで採れた時代があったという。さすがに今では裾まくり程度では採れないだろうが、ごらんのように腰まで程度の深さ(1m位)なら、今でも十分に採集可能だ。沖を見ると、ウェットスーツに素潜りで採る人もいる。こちらはかなり体力が要る。さらに沖なら舟で採る。

ここのウニの味は抜群。下北の中でも1、2を争う味の良さだ。日本全体としてウニはやはり南より北の方が美味いが(世界的にもそのようだ)、同じ下北でも磯の環境、潮の流れ等の影響で結構ばらつきがあるらしい。利尻島のウニがここの味とよく似ていたような気がする。日本人のように生のウニを食べる国、地域は世界的に見て、どうも多くはないようだ(「ウニの身」という言い方を見たり、聞いたりしたことがあるが、食べる部分は正しくは身ではなく卵である。お盆前後の時期に受精が始まり、殻の中にミルクのような精子が見られるようになる。資源保護の観点からいえば、この時期に採集を解禁するのは将来的に問題がある)。

食べ方としては生食以外に、海外では焼いたり、ソースにしたり、生地に混ぜてパンやケーキのようにして食べるようだ。ウニをベースにアワビやホタテなどを十年物のぶ厚いホタテ貝に入れ、味噌仕立ての卵とじにした「味噌貝焼き(みそかやき)」は一度食べてみる価値が有るだろう。世界全体でみるとウニを食べる人口はかなり少ないようだが、ウニ好きから見れば、あまり流行しない方が有難い。クロマグロのように、需要が増せば、そのうち食べられなくなってしまうに違いない。

ウニは雑食性で、海藻だけでなく魚などの死骸も食べるらしい。しかし基本的には豊かな海藻が無ければウニは育たない。豊かな海藻はきれいな海が無ければ生育しない。つまり海の自然環境を良くすることが、(当然のことだが)安全で美味しいウニを頂くことにつながるということだ。

下北・尻屋崎にて

El boceto es、太平洋を眼下に望む尻屋崎灯台から、南へほんの少し離れたところに建っている、高さ数十mのアンテナとその基部を描いた。基部の構造物はちっぽけな、コンクリート製の装置室。Pero、なぜかここへ来るたびに、(有名な灯台を描かないことはあっても)必ずこのアンテナは描きたくなる。何かが無性に心をかきむしる。小学四年生のバス遠足で、初めて来た時もこれを描いたのを覚えている。このアンテナを見ると、今でもその時とほとんど同じ気持ちになるから不思議だ。

空にノスリ(中型の鷹)が飛んでいる。遠くに背の低い松林が続き、その奥で尻労(しつかり)の高さ2、3百mのl断崖絶壁が、画面右から左に太平洋を押し出している。私の絵としてはこれで完成。毎日人と車の間で生活している私は、最近少し疲れている。このスケッチを描くことが別世界に飛んで行く切符のようなもの。…心のどこかでノスリに憧れているのかも知れない。

“Yashabushi” is very strong trees lived in all kind of the wasteland. The soil of damp ground is stabilised by this tree that live in. That wasteland will be good condition for people’s usu. However this tree itself is not only completely usufull at timber, but it also interrut grow other plant’s up. So it has been hatred by local people. Howevew, from the other point of view, Yashabushi is like a pioneer of opening bushes. So I feel like to respect it.
